Baking with Mary Berry

Happy Friday my loves!

A few weeks ago I bought the cookbook “Baking with Mary Berry”. Now, if you don’t know who Mary Berry is, chances are you’re not British, you don’t watch The Great British Bake-Off, or you don’t love sweet treats. She is the Queen of British Baking, and just a queen in general in my opinion!

I’ve been dying to try out some of these recipes ever since I bought the book, so this afternoon I thought, what the heck!

I decided to make a Bakewell Tart. One of my all time faves, and a classic British treat.

I have loved to bake for as long as I can remember, and I love baking and cooking shows. Add that to my love of all things British and I was absolutely stoked when I saw this book in a bargain bin at a local supermarket.

Just looking at the picture in this book makes my mouth water. Spoiler, mine doesn’t look as good as Mary Berry’s!

I started with some pretty basic ingredients: Flour, sugar, one egg, butter, almond extract, rice flour, raspberry jam, and some icing sugar.

I rolled the dough, lined a pie tin, coated the bottom of the base with raspberry jam, and made the filling. It’s made mostly of sugar and butter- so yeah, it’s friggin delicious.

Okay, so here’s where I got a little lazy. You’re meant to use the scraps of the dough from the base to create a lattice top for the pie. But I am not an actual baker, I do not have the proper tools, I did not have a lot of dough left, and it had been a long day and I was tired! So this is how it ended up looking. Not the prettiest pie in the world, but don’t hate!

Then it was into the oven at 400 degrees for 45 minutes! And then we got……

BAM! This delicious looking slice of heaven! (Slice, get it.. cause it’s pie).

I dusted it with icing sugar and it was ready to serve!

And let me just tell you, it turned out damn good. I am very impressed with myself! It may not be the most beautiful pie in the world, and Mary Berry would probably slap me in the face if she saw it, but it is friggin delicious, and I think I did good!

I plan to make more of the recipes in the book, and you can be sure I will keep you up to date on those! So you have that to look forward to!

Now, if you’ll excuse me, I’m going to go eat another piece of my Bakewell Tart!
